Tra ossidazioni e soleras: a Jerez da Lustau
Che belli i tempi quando ancora si poteva viaggiare in piena libertà. Tutto l’anno a pianificare le ferie, cercando di far coesistere il piacere di ferie familiare con quella che è la nostra vera malattia: l’enocultura.
Eccomi allora a riportare uno dei viaggi più suggestivi che si possono fare nel mondo dell’enocultura, a Jerez, culla dello Sherry.
Una passeggiata a Jerez
Jerez, va ricordato, è tradizionalmente una località portuale, e come abbiamo già visto, ciò ha influito molto sull’ascesa notarile di questi vini.
Tuttavia Jerez ai giorni nostri è una città decisamente rustica, con palesi influenze arabe, contornata da cattedrali, bodegas e danzatrici di flamenco. Caliente città del sud, tanto soleggiata da poter godere perfino a novembre del profumo dei fiori in fioritura.
L’obbiettivo della giornata a Jerez è principalmente uno: visitare una bodega. Ce ne sono diverse: Sandeman, Tio Pepe, Williams & Humbert, e molte altre. Tutte molto conosciute a livello internazionale e di una certa portata commerciale. La loro essenzialità si sostanzia anche dalla difficoltà per un piccolo produttore di poter produrre il proprio Sherry, in quanto il procedimento di produzione e affinamento risulta molto complesso.
Non volendo improvvisare, siamo partiti con le idee chiare e la bodega che ho voluto prendere come riferimento è stata Lustau.
Due parole su Lustau
Lustau è una bodega che risale al 1896. Ma sarei poco credibile se dicessi che è una delle più antiche, in quanto nella zona, tutte le cantine tradizionali sono di stampo, almeno, ottocentesco.
Iniziata con José Ruiz-Berdejo, umile almacenista (Produttore di Sherry indipendente che vende a cantine), seguita dall’acquisto, da parte di sua figlia Maria, di una piccola cantina nel centro di Jerez, fino alla consacrazione da parte di Emilio Lustau Ortega, marito di Maria.
La bodega fu trasferita da Emilio nel distretto di Santiago, storico quartiere di Jerez. Nel 1945 il marito di Maria decide di avviare il suo business e passare da almacenista a brand. Nacque Lustau.
Negli anni ’90 la bodega viene rilevata da una famiglia spagnola, famosa produttrice di Sherry: Luis Caballero.
Negli anni 2000, Lustau acquista delle famose strutture atte a cantina del diciannovesimo secolo. Ristrutturate, sono diventate il fiore all’occhiello di questa azienda: luoghi storici, pittoreschi dove produrre meravigliosi Sherry.
Ad oggi Lustau è l’unica bodegaa che produce Sherry da tutte e 3 le località del “triangolo dello Sherry”: Jerez de la Frontiera, El Puerto de Santa Maria e Sanlùcar de Barrameda.
Tour “copa en mano”
Arriva il nostro momento. È utile ricordare che, rispetto alle visite ai piccoli artigiani del vino, qui siamo al cospetto di una grande azienda esportatrice. Il tour che ci viene dedicato è, ovviamente, in inglese e in gruppo. Tuttavia questo non ha raffreddato gli animi, anzi, si è distinta tutta la calorosa anima di questa zona. La nostra guida inizia subito con il farci notare la somiglianza della cantina a qualcosa di ecclesiastico. Eravamo dentro ad una grande cattedrale.
La grande cantina/cattedrale era contornata da batterie di botti, disposte nel classico soleras, tuttavia l’attenzione si rivolge altrove. Una particolare attenzione alle finestre che contornano la cantina, esse giocano un ruolo cruciale per il controllo della temperatura e l’umidità. Qui, come in tutta la zona, l’accortezza per i due venti principali che soffiano da est e da ovest è altissima, cruciale. Da est soffia il caldo e secco “levante”, mentre da ovest il fresco e umido “poniente”. La cantina li gestisce ovviamente con un gioco di finestre, collocate appunto a est e a ovest. Tutto ciò si unisce al terreno della cantina, fondamentale elemento. Viene tenuto costantemente bagnato per poter preservare l’umidità della cantina e la sua temperatura.
La nostra guida, con mio immenso piacere, ci ha tenuto a sottolineare che questo è rigorosamente un tour “copa en mano”. Quindi si parte, tra “film” di velo de flor, soleras, sobretablas, ecc. con in mano il primo calice: l’ossidativo Amontillado.
Importante
Se non si ha familiarità con lo Sherry è meglio leggere queste righe prima degli assaggi.
Nell’immaginario comune la tipologia dello Sherry è di vino prettamente dolce. Altre volte di vino prodotto prettamente sotto il velo de flor.
Sintetizzando, in realtà si può dividere mentalmente la produzione in 2 vie possibili, chiamandole: crianza biologica e crianza ossidativa.
Il velo di lieviti è capriccioso ed esigente, a volte la sua formazione va a buon fine e ci troviamo di fronte a dei prodotti che invecchiano sotto di esso (crianza biologica). Prodotti con solo uva Palomino, sono le tipologie “fino” e “manzanilla”.
Altre volte invece il velo – per motivi legati spesso alla vendemmia e alle condizioni pedo-climatiche – non si viene a creare. Ciò, ovviamente, comporta un’esposizione all’ossigeno senza protezione, così si ricorre ad un altro rimedio protettivo: la fortificazione. Pratica utilizzata per tutte le tipologie, ma per quelle che invecchiano senza velo (crianza ossidativa), la fortificazione raggiunge i 17/18 % (15% fino e manzanilla). Prodotti con solo uva Palomino, sono le tipologie “amontillado” e “oloroso”. Giusto specificare che l’amontillado inizia in crianza biologica, per poi essere indotto a perdere il velo, mediante aggiunta d’alcol, e proseguire quindi in crianza ossidativa.
Esiste anche una via di eccezione molto rara e particolare: il “palo cortado”. Rarissima e ambita, si tratta di una tipologia che inizia il suo riposo sotto il velo di lieviti (crianza biologica), ma poi, per motivi ignoti, il velo decade in maniera naturale e prosegue il suo riposo in maniera ossidativa (crianza ossidativa).
Altre versioni di questo vino, che cavalcano negli ultimi anni, ahimè, una notevole notorietà sono: le dolci naturali “Pedro Ximenez” e “Muscat”, dalle omonime varietà. Infine, un pò meno note, le dolcificate “pale cream”, “cream” e “medium”.
Riporto i due assaggi che porto nel cuore da quel viaggio a Jerez.
Amontillado “Los Arcos”
È giusto ricordarlo: stiamo parlando di vini liquorosi e sono gli unici che vengono prodotti (eccezion fatta per produzioni come il vermouth o il brandy).
All’ingresso della cantina di Plaza del Cubo troviamo due archi, sotto i quali viene messa a maturare questa tipologia. L’amontillado è una tipologia fondamentalmente a crianza ossidativa, come abbiamo visto. Diciamocelo, l’acidità in questo vino non è proprio una virtù, e nemmeno si prova troppo a inseguire quella freschezza, visto il clima torrido. Tuttavia questa tipologia di Sherry colpisce subito per non essere affatto piatta. Una lieve nota sapida, tipica nei manzanilla, accompagna il sorso. Ambra liquida nel calice, lo Sherry è un grande vino da meditazione e, ad onor del vero, il comparto a cui volgo l’attenzione è quello olfattivo con note nocciolate, di caramello salato, mallo di noce. Note comunque prettamente legate alla frutta secca e ai fiori disidratati. Un naso tutto sommato soddisfacente unito ad una beva davvero dinamica per la tipologia, con pienezza di sorso, umami e lunga pulizia, con quel finale nocciolato che richiama la beva. Ancora e ancora.
Almacenista (Cayetano del Pino y Cìa) Palo Cortado de Jerez
Tipologia assai pregiata, come abbiamo già visto siamo in una strada di mezzo, come la verità, prodotta da almacenista e poi venduto a Lustau. Già il colore è completamente diverso dall’amontillado, c’è un piglio vitale in più, un oro puro con sfumature ambrate. Anche all’olfatto è un gioco di sfumature, predominante una traccia appassita, di fiore, con note iodate, mandorla, toffee, carrube, noce moscata. Tutto in perfetto ordine. Mentre il palato tiene abbastanza fede all’olfatto, con la mandorla amara che chiude, richiamando il sorso, comunque molto lungo.
Un saluto da Jerez
Esperienza estremamente positiva, che consiglio a tutti, anche ai non amanti della tipologia ossidativa. Qui si respira l’aria di chi il vino lo fa oramai da generazioni e il culto della territorialità è di casa. Per chi ama le tipologie dolci, sicuramente troverete pane per i vostri denti, con golose interpretazioni di Pedro Ximenez dal piglio scuro di datteri e cioccolato, fino agli agrumi canditi del Moscatel.
